Lemon Poppyseed Protein Cookies

  • 2 scoops ISO100 Gourmet Vanilla protein powder
  • 14 cup coconut flour
  • 1 Tbsp poppy seeds
  • 34 tsp baking powder
  • 12 tsp xanthan gum
  • 12 tsp salt
  • 1 lemon, zested & juiced, divided
  • 1 large egg, at room temperature
  • 14 cup honey
  • 1 12 Tbsp coconut oil, melted
  • 1 tsp vanilla extract


  1. Preheat the oven to 325°F.
  2. In a small bowl, whisk together the protein powder, coconut flour, poppy seeds, baking powder, xanthan gum, salt, and lemon zest.
  3. In a separate bowl, whisk together the lemon juice, egg, honey, coconut oil, and vanilla extract until smooth.
  4. Stir the protein powder mixture into the wet ingredients and mix until completely incorporated. Let the dough rest for at least 10 minutes.
  5. Scoop the cookie dough into 12 rounded scoops onto a parchment-lined baking sheet, and flatten until they’re about 12‑inch thick.
  6. Bake for 11 – 13 minutes, until the edges are golden.
  7. Remove cookies from the oven and allow them to cool on the baking sheet for 10 minutes before moving to a wire rack. Enjoy!
