Crispy Crunchy Cinnamon Toasty Protein Cereal Bars

  1. In a large pot, melt coconut oil over low heat.
  2. Add marshmallows and stir until fully melted.
  3. Add 1 scoops of protein powder and stir until fully combined (make sure there are no lumps).
  4. Add cereal and stir until fully coated with the marshmallow mixture. Transfer to a greased 13×9 pan and set aside for 30 minutes.
  5. OPTIONAL: To make the frosting, mix 2 scoops of protein powder, powdered sugar substitute and almond milk together in a bowl until smooth & creamy.
  6. Top cereal mixture with frosting and set aside for another 30 minutes, or until set.
  7. Slice into 16 bars, stack one on top of the other so that the frosting is on the inside to create a sandwich for a total of 8 bars. Dig in.
