  1. Preheat oven to 350°F.
  2. Whisk together the coconut flour, protein powder, and pudding mix in a bowl.
  3. In a separate bowl, whisk together the Greek yogurt and egg until fully combined, then add them to the dry mixture. Mix everything with a rubber spatula until fully combined.
  4. Divide the dough into 8 equal parts. Roll each piece of dough into a ball (flour your hands if the dough is too sticky to roll).
  5. Place dough balls on parchment-lined baking sheet and bake for 14 minutes.
  6. Allow donut holes to cool slightly before rolling them in 1 Tbsp of powdered sugar substitute. Enjoy!
