Ingredients

Cookies

  • 2 Scoops (36g) Elite Casein Smooth Vanilla
  • 1 12 Tbsp. Stevia
  • 1 12 Tbsp. Gluten-free Baking Flour
  • 12 Tsp. Ground Ginger
  • 14 Tsp. Ground Cinnamon
  • 18 Tsp. Baking Soda
  • Dash Ground Allspice
  • Dash Salt
  • 1 Large Egg White
  • 1 12 Tbsp. Coconut Oil
  • 1 Tbsp. Molasses

Icing

  • 14 Cup Powdered Calorie-free Sweetener such as Powdered Monk Fruit
  • 1 Tsp. Unsweetened Almond Milk
  • 12 Tsp. Coconut Oil

Directions

  1. Preheat oven to 350 degrees F.
  2. Whisk together (first 8) dry ingredients in a small mixing bowl.
  3. Add egg white, coconut oil, molasses and mix until well combined.
  4. Roll out dough on a lightly floured surface. Use cookie cutters to make shapes.
  5. Place cookies on a baking sheet lined with parchment paper. Bake for 12 – 13 minutes until edges are firm.
  6. While cookies cool on rack, combine icing ingredients, decorate & dive in.
