Casein Protein Gingerbread Cookies
Ingredients
Cookies
- 2 Scoops (36g) Elite Casein Smooth Vanilla
- 1 1⁄2 Tbsp. Stevia
- 1 1⁄2 Tbsp. Gluten-free Baking Flour
- 1⁄2 Tsp. Ground Ginger
- 1⁄4 Tsp. Ground Cinnamon
- 1⁄8 Tsp. Baking Soda
- Dash Ground Allspice
- Dash Salt
- 1 Large Egg White
- 1 1⁄2 Tbsp. Coconut Oil
- 1 Tbsp. Molasses
Icing
- 1⁄4 Cup Powdered Calorie-free Sweetener such as Powdered Monk Fruit
- 1 Tsp. Unsweetened Almond Milk
- 1⁄2 Tsp. Coconut Oil
Directions
- Preheat oven to 350 degrees F.
- Whisk together (first 8) dry ingredients in a small mixing bowl.
- Add egg white, coconut oil, molasses and mix until well combined.
- Roll out dough on a lightly floured surface. Use cookie cutters to make shapes.
- Place cookies on a baking sheet lined with parchment paper. Bake for 12 – 13 minutes until edges are firm.
- While cookies cool on rack, combine icing ingredients, decorate & dive in.
